This coffee comes from small family farms in the Kintamani Highlands of Bali, where growers work within a traditional water sharing and community system known as Subak Abian. The trees thrive between 1200 and 1600 meters on rich volcanic soil, and the lot is made up of Bourbon types S795 and USDA 762 along with Typica and Catimor.
The cherries are dried in whole fruit using a natural process, which highlights the character of the region and preserves a full expression of the cultivars. The natural fermentation pulls out vibrant tropical fruit flavors whilst still preserving the classic Indonesian depth and heavy mouthfeel. The result reflects both the high elevation and the careful post harvest work done at origin.
