This organic Peruvian decaf comes from the highland communities of San Ignacio in Cajamarca, where steep mountain terrain and cool Andean air create ideal conditions for slow and even cherry development. Farms here sit between 1600 and 2100 meters, a range known for producing dense beans with naturally balanced sweetness and a gentle, structured profile. Many smallholder families cultivate traditional varieties such as Typica, Bourbon, Pache, Caturra, and Catimor, often intercropped with shade trees that support biodiversity and protect the fruit during long maturation.

After careful hand picking and selective washing, the coffee is dried on raised beds in the sun before undergoing Swiss Water decaffeination. This method preserves the clarity and natural character of high-grown Peruvian coffee while removing caffeine without chemicals. The result is a decaf that holds its own as a daily cup with steady sweetness, a smooth finish, and a comforting feel across all brew methods.
