This Grade 1 natural comes from Dambi Uddo in Ethiopia’s Western Guji region, where hundreds of smallholder farmers cultivate coffee at elevations reaching 2,200 meters. After harvest, whole coffee cherries are carefully dried on raised beds, turned frequently for even drying, and continually sorted to remove underripe fruit and defects.
The result is an expressive Ethiopian natural with a fruit-forward character, rich sweetness, and an aromatic quality that evolves beautifully with roast development. Lighter roasts emphasize its brightness and fragrance, while medium and darker development brings forward a fuller, jammy character with deeper bittersweet richness. It is especially rewarding as a pour over or filter coffee, while more developed roasts offer plenty of body and intensity for those who prefer a richer cup.Tasting Notes
