This washed Ethiopian coffee comes from the Geruke Cooperative in western Ethiopia’s Jimma region, an area known for producing a distinctly different expression of Ethiopian coffee than the more familiar coffees of Guji and Yirgacheffe. Geruke is part of the Jimma Farmers Cooperative Union, with coffee collected from small producers in surrounding villages and brought to the washing station for careful processing.
After the coffee cherries are pulped, the remaining mucilage is removed through a 36 hour fermentation before the coffee is dried on raised African beds for roughly 10 to 12 days. The result is a beautifully balanced coffee with abundant sweetness, a rounded body, and gentle layers of fruit and spice.
We especially enjoy this coffee from light through medium roasts, where its sweetness and complexity remain clear, but it also has enough body and structure to make an excellent espresso or a satisfying everyday filter coffee.
