This organic coffee comes from a patchwork of small farms surrounding La Concordia, Chiapas, where many producers cultivate just a few hectares at elevations reaching up to 1900 meters. Each family harvests and processes its own coffee before the lots are brought together at a local mill, creating a regional blend shaped by dozens of individual farms.
What makes this coffee especially appealing is how much depth it delivers without becoming demanding. The washed process keeps the cup clean and balanced, while the high growing elevations help preserve sweetness, structure, and a gentle brightness. It has the kind of comforting richness that feels familiar at first sip, then gradually reveals more character as it cools.
It performs beautifully across a wide range of roast levels and brewing methods. Lighter roasts emphasize clarity and sweetness, while medium and darker roasts bring out a fuller body and deeper richness. It is equally at home in drip, pour over, immersion, or espresso, making it an easy coffee to return to day after day.
